Sausage gravy-filled stuffing muffins by Chef John are a delicious twist on a classic favorite.
Ingredients:
  • 3 tablespoons unsalted butter
  • 6 ounces sweet Italian turkey sausage, casings removed
  • 0.25 cup all-purpose flour
  • 4 tablespoons chopped green onions
  • 1.5 cups cold milk
  • 1 pinch cayenne pepper, or to taste
  • 5 tablespoons unsalted butter, divided
  • 1 cup diced onion
  • 0.5 cup diced celery
  • 1 teaspoon poultry seasoning
  • 5 cups chicken broth
  • 12 cups dry bread cubes
  • 1 tablespoon chopped fresh Italian parsley
  • 1 tablespoon minced fresh sage
  • 2 teaspoons minced fresh thyme
  • 3 large eggs, beaten
  • 2 tablespoons unsalted butter, melted
Instructions:
  • Prepare the gravy: In a saucepan over medium-high heat, melt butter. Brown the sausage until crumbly for 5 to 7 minutes. Whisk in flour to create a roux; stir for 2 minutes. Add green onions and cook until fragrant, about 1 minute. Enjoy!
  • Gradually add milk and stir until the mixture boils. Cook and stir until thickened. Add cayenne, salt, and pepper; cook for 1 more minute, then remove from heat.
  • Pour the gravy into a bowl and allow it to cool to room temperature for 15 to 20 minutes. Cover it tightly and refrigerate until it becomes cold and thick, which typically takes at least 2 hours or until you're ready to use it.
  • Prepare the muffin tin by generously buttering it with 1 tablespoon of butter, then preheat the oven to 400 degrees F (200 degrees C) with a baking pan on the lowest rack.
  • In a saucepan over medium-high heat, melt 4 tablespoons of butter. Sauté onion and celery until onion becomes translucent, about 4 to 5 minutes. Stir in poultry seasoning, salt, and pepper, and cook for an additional minute. Pour in chicken broth and bring to a boil.
  • In a large bowl, mix together bread cubes, parsley, sage, and thyme.
  • Pour the hot broth over the bread mixture and stir well. Add the eggs and mix thoroughly. Fill the muffin cups to the brim with the stuffing mixture, then evenly distribute the remaining stuffing on top of each muffin, creating a beautifully high pile.
  • Using your wet finger, create a deep hole in the center of each muffin, ensuring to stop about 1 inch from the bottom. Fill each hole with approximately 2 tablespoons of chilled gravy, focusing on centering it. Save any extra gravy for future recipes.
  • Use damp hands to shape the stuffing over each muffin to cover the gravy center, then generously brush the tops with melted butter.
  • Bake in the center of the oven until muffins are golden brown and firm, around 20 minutes.
  • Allow the dish to rest in the pan for 5 to 10 minutes before elegantly plating and serving.
