Loaded Turkey and Gravy Stuffed Potatoes

Thanksgiving leftovers transformed: Twiced-baked potatoes packed with turkey, stuffing, cheese, and gravy for a delicious twist.
Ingredients:
  • 4 large baking potatoes
  • 1 tablespoon canola oil
  • 0.5 cup butter, melted
  • 0.5 cup leftover gravy
  • 0.5 cup cream cheese
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 1 cup chopped cooked turkey
  • 1 cup chopped leftover stuffing
  • 2 green onions, thinly sliced
  • 1.25 cups shredded Cheddar cheese, divided
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and then coat the potatoes with canola oil on a baking sheet.
  • Bake in the preheated oven for about 1 hour, or until easily pierced with a knife. Then reduce the oven temperature to 350°F (175°C).
  • Halve the potatoes lengthwise, scoop out the flesh into a stand mixer bowl, leaving a small border of flesh intact in the skin. Return the empty potato skins to the baking sheet.
  • Combine butter, gravy, cream cheese, salt, and pepper with the potato flesh on low speed until smooth. Incorporate 1 cup of Cheddar cheese briefly. Transfer mixture to a bowl, gently fold in turkey, stuffing, and green onions using a spatula.
  • Stuff the potato skins with the mixture and generously sprinkle the remaining 1/4 cup of Cheddar cheese on top.
  • Place the dish back in the oven and bake for about 15 minutes, or until heated through.
