Flavorful loaded mashed potatoes with turkey bacon and chives, made healthy with low sodium and low fat ingredients.
Ingredients:
  • 1 (12 ounce) package turkey bacon
  • 5 pounds russet potatoes, peeled and diced
  • 1 (32 ounce) carton Swanson® Unsalted Chicken Stock
  • 0.25 cup low-fat sour cream
  • 0.25 cup low-sodium dry ranch dressing mix
  • 0.75 cup shredded nonfat Cheddar cheese
  • 1 tablespoon chopped fresh chives
Instructions:
  • Crisp up the turkey bacon in a skillet over medium heat until it reaches your desired level of crispiness; then crumble it.
  • In a large stock pot, cook potatoes in Swanson® Unsalted Chicken Broth until soft, about 15 to 20 minutes. Keep the broth. Remove from heat and stir in sour cream and ranch seasoning mix. Mash everything together using a mixer or a mashing utensil for 2 to 3 minutes, until smooth and well mixed.
  • Incorporate the savory bacon, rich Cheddar cheese, and aromatic chives into the mixture.
