Classic Purim hamantaschen with prune and apricot filling - a cherished traditional recipe.
Ingredients:
  • 2 cups pitted prunes, cooked, drained and mashed
  • 2 cups dried apricots, cooked drained and mashed
  • 0.5 cup safflower oil
  • 1 orange, zested
  • 4 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 cup chopped walnuts
  • 1 tablespoon lemon juice
Instructions:
  • Combine prunes and apricots in a large pot, add water, and bring to a vigorous boil. Cook uncovered for about 15 minutes, stirring occasionally, until fruit is tender. Drain in a colander and gently mash together in a medium bowl with a fork. Let it cool while preparing the dough.
  • - Preheat the oven to a toasty 350 degrees F (175 degrees C) and line baking sheets with parchment paper.
  • In a large bowl, combine 1 cup of sugar, eggs, oil, lemon zest, and orange zest until mixture is well blended. In another bowl, sift together flour and baking powder. Add the egg mixture to the flour mixture and knead with your hands until dough forms.
  • Place dough onto a floured surface and roll it out to a 1/4-inch thickness. Use a cookie cutter or the rim of a glass to cut out circles.
  • Combine the prune-apricot mixture, walnuts, 1/3 cup sugar, and lemon juice in a large bowl until the filling is thoroughly mixed. Spoon 1 tablespoon of the filling into the center of each dough circle. Pinch the edges tightly to form a triangle shape, keeping the filling exposed in the center. Repeat for the remaining dough circles and place the hamantaschen on the baking sheets.
  • Bake in the oven until golden brown, approximately 20 minutes. Allow to cool on the baking sheets for 10 minutes, then transfer to a wire rack to cool completely.
