Homemade cornbread passed down from grandma, unbeatable in 47 years of tastings. Closest contender: cafeteria's old cook's version.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup white cornmeal
  • 0.25 cup white sugar
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup buttermilk
  • 0.25 cup corn oil
  • 1 egg
Instructions:
  • Preheat your oven to a toasty 400°F (200°C) and generously grease an 8-inch glass baking dish.
  • First, combine the flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl. In another bowl, mix the buttermilk, corn oil, and egg. Combine the wet and dry mixtures until just blended. Pour the batter into the pan and gently shake to even it out.
  • Bake at 350°F for 30 minutes or until a knife comes out clean from the center and the top is golden brown. Serve hot with a dollop of butter; it's perfectly sweet on its own!
