Greek Easter lamb

Indulge in a mouthwatering Greek lamb for a festive Easter meal.
Ingredients:
  • 80ml olive oil
  • 5 garlic cloves, peeled, chopped
  • 82.50 ml oregano leaves
  • 10.00 gm sweet paprika
  • 2.5kg Whole Lamb Leg Roast
  • 1.2kg potatoes, cut into wedges
  • 1 garlic bulb, halved crossways
  • 1 lemon, cut into wedges
  • 50g olive
  • 100g fetta, crumbled
  • Extra oregano sprigs, to serve
Instructions:
  • Preheat your oven to 180C and generously grease a large baking dish.
  • Combine oil, chopped garlic, oregano, and paprika in a food processor until well mixed. Season to taste. Set aside a portion of the oregano mixture. Rub the rest all over the lamb to coat. Transfer lamb to a baking dish, cover with foil, and bake for 1 hour and 30 minutes.
  • Mix together the potato, garlic bulb, lemon, and reserved oregano mixture in a bowl, then season to taste. Place the potato mixture around the lamb in the dish. Bake for an additional hour until the lamb is golden and cooked to your preference. Cover with foil and let it rest for 15 minutes before serving.
  • Present the lamb and potato mixture on a grand serving platter, garnish generously with olives, feta cheese, and aromatic oregano.
