Greek Easter lamb

Indulge in a flavorful Greek lamb for a festive Easter meal.
Ingredients:
  • 80ml olive oil
  • 5 garlic cloves, peeled, chopped
  • 82.50 ml oregano leaves
  • 10.00 gm sweet paprika
  • 2.5kg Whole Lamb Leg Roast
  • 1.2kg potatoes, cut into wedges
  • 1 garlic bulb, halved crossways
  • 1 lemon, cut into wedges
  • 50g olive
  • 100g fetta, crumbled
  • Extra oregano sprigs, to serve
Instructions:
  • Preheat your oven to 180C and generously grease a large baking dish.
  • Combine oil, chopped garlic, oregano, and paprika in a food processor and blend until smooth. Season to taste. Set aside a quarter of the mixture. Rub the rest of the oregano blend all over the lamb. Transfer lamb to a baking dish. Cover with foil and bake for 1 hour 30 minutes.
  • In a bowl, mix potatoes, whole garlic bulb, lemon, and reserved oregano mixture. Season to taste. Spread the potato mixture around the lamb in the dish. Bake for an additional hour until the lamb is golden and cooked to your preference. Cover with foil and let it rest for 15 minutes before serving.
  • Place the lamb and potato mixture beautifully on a large serving platter. Garnish generously with olives, crumbled feta cheese, and freshly sprinkled oregano.
