Greek Farro Salad

Mediterranean farro salad - a delicious twist on classic pasta salad.
Ingredients:
  • 1.5 cups farro
  • 4 cups chicken broth
  • 1 teaspoon sea salt, or to taste
  • 0.25 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Greek seasoning
  • 1 clove garlic, minced
  • 1 cup seeded, diced tomato
  • 1 cup seeded, diced cucumber
  • 1 cup chopped red bell pepper
  • 0.75 cup thinly sliced red onion
  • 1 cup crumbled feta cheese
  • salt and ground black pepper to taste
Instructions:
  • 1. Give the farro a good rinse, then transfer it to a pot. Add enough chicken broth to cover the farro by at least an inch, topping up with water if necessary. Mix in 1 teaspoon of olive oil and sea salt.
  • Bring the liquid to a boil, then lower the heat to medium and simmer uncovered. Stir frequently until the farro is tender - approximately 35 minutes for whole grain farro or about 20 minutes for pearled farro.
  • Drain the farro, rinse it with cold water, and let it cool completely for about 15 minutes.
  • In a large bowl, vigorously whisk together 1/4 cup of extra-virgin olive oil, lemon juice, Greek seasoning, and garlic until combined. Add tomato, cucumber, red pepper, red onion, and feta cheese, stirring well. Mix in the farro until coated with the dressing; season with salt and pepper. Chill the salad in the refrigerator for approximately 2 hours before serving.
