Greek Beef and Orzo (lighter recipe)

Savor a Greek-inspired beef and pasta dish in a quick and light one-pan recipe.
Ingredients:
  • 1 lb extra-lean (at least 90%) ground beef
  • 1 can (14.5 oz) stewed tomatoes, undrained
  • 1 medium celery stalk, sliced (1/2 cup)
  • 1/2 cup uncooked orzo or rosamarina pasta
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1/2 cup Yoplait® Fat Free plain yogurt (from 2-lb container)
Instructions:
  • In a 10-inch nonstick skillet, sauté beef over medium-high heat for about 6 minutes, stirring occasionally, until nicely browned. Remember to drain excess grease before proceeding.
  • Combine all remaining ingredients, except yogurt, and bring to a boil. Lower the heat, cover, and simmer for about 12 minutes, stirring occasionally, until the liquid is absorbed and the pasta is tender. Serve with a dollop of yogurt on top.
