Whip up a speedy smoky beef and ancient grain salad for a delicious weeknight dinner!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 7.50 gm smoked paprika
  • 1 tsp dried oregano
  • 700g beef rump steaks
  • 2 x 250g pkts Brand 7 Ancient Grains Microwavable Rice
  • 2 spring onions, thinly sliced diagonally
  • 60g pkt baby spinach
  • 200g Perino tomatoes, halved
  • 1 Lebanese cucumber, thinly sliced into rounds
  • 42.00 gm lemon juice
  • Greek yoghurt, to serve
  • Smoked paprika, extra, to serve
  • Lemon wedges, to serve
Instructions:
  • In a medium bowl, mix together 1 tablespoon of oil with paprika and oregano, season with salt and pepper. Add the beef and toss until coated evenly.
  • Preheat a barbecue or chargrill pan over medium-high heat. Grill the beef for 2 minutes on each side, or until cooked to your preference. Place on a plate, cover with foil, and let it rest for 5 minutes before thinly slicing.
  • While the grain mix is cooking, prepare the other vegetables. Transfer the cooked grain mix to a large bowl and let it cool for 5 minutes. Mix in the remaining oil, spring onion, spinach, tomato, cucumber, and lemon juice. Season with salt and pepper.
  • Plate the salad, placing the beef on top, then drizzle with yogurt and sprinkle with extra paprika. Serve with lemon wedges on the side.
