Savory beef and Parmesan casserole with layers of tomato sauce and macaroni.
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 1 tablespoon extra virgin olive oil
  • 0.5 large onion, diced
  • 1 (14.5 ounce) can peeled and diced tomatoes
  • ground black pepper to taste
  • 1 teaspoon dried oregano
  • 6 ounces grated Parmesan cheese, divided
  • 1 tablespoon butter
  • 1 egg yolk
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil, then cook the macaroni pasta for 8 to 10 minutes until al dente. Drain the pasta.
  • In a skillet, heat olive oil and sauté garlic, onions, and beef until meat is browned; drain excess fat. Add tomatoes, pepper, and oregano. Simmer for 5 minutes. Sprinkle half of the Parmesan cheese on top.
  • Prepare your casserole or baking dish by delicately coating it with fragrant olive oil. Layer half of the cooked pasta in the dish, followed by the savory meat sauce, and then top it off with the remaining pasta.
  • In a saucepan, melt butter and whisk in flour. Gradually pour in milk, stirring until nearly boiling. In a bowl, mix the rest of the parmesan cheese and egg yolk, then slowly incorporate into the milk sauce while stirring constantly.
  • Pour the luscious sauce over the macaroni and bake for 30 minutes until the top is beautifully golden and slightly crispy.
