Greek-inspired beef and macaroni casserole with creamy sauce.
Ingredients:
  • 1 tablespoon butter
  • 1 onion, chopped
  • 3 pounds lean ground beef
  • 0.75 cup water
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons ground allspice
  • 1.5 teaspoons salt, or to taste
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon pepper
  • 2 large eggs, beaten
  • 1 pound uncooked macaroni
  • 1 cup grated Parmesan cheese
  • 0.5 cup butter, melted
  • 4 large eggs, well beaten
  • 0.75 cup half-and-half
  • 1 tablespoon all-purpose flour
  • 0.5 teaspoon salt
  • ground nutmeg to taste
Instructions:
  • In a large skillet over medium-high heat, melt butter. Add onion and cook until beginning to soften, about 3 minutes. Add ground beef and cook until no longer pink. Stir in water and tomato paste. Season with allspice, salt, nutmeg, cinnamon, and pepper. Simmer covered for 5 minutes. Adjust salt to taste, then refrigerate until cold. Remove any congealed fat, mix with eggs, and set aside.
  • Preheat the oven to 400°F (200°C) to create the perfect cooking environment.
  • Cook the macaroni in a pot of boiling salted water until al dente (8 to 10 minutes). Drain and rinse with cold water. Thoroughly mix the macaroni with eggs until coated evenly.
  • Layer half of the macaroni mixture in a 11x14x2-inch baking pan. Top with half of the grated Parmesan cheese and drizzle with half of the melted butter. Add the meat mixture, layer the remaining macaroni, and finish with the remaining Parmesan cheese and melted butter.
  • Prepare the cream sauce by combining eggs and half-and-half. Gradually whisk in Parmesan cheese, flour, and salt until fully incorporated.
  • Evenly pour the cream mixture over the pastitsio, then sprinkle with nutmeg for a perfect finishing touch.
  • Cover the pan with foil and bake in the preheated oven for 15 minutes. Uncover and continue to bake until the top is golden brown, around 30 minutes. Let it stand for 15 minutes before serving.
