Greek pasta bake: Cozy comfort food for chilly evenings.
Ingredients:
  • 500g penne pasta
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 500g 3 star beef mince
  • 400g rich & thick chopped tomatoes
  • 125ml red wine
  • 2 dried bay leaves
  • 1/2 tsp dried oregano
  • 1/4 tsp ground cloves
  • 2.50 gm ground cinnamon
  • 4.50 gm sugar
  • 80g butter
  • 50g plain flour
  • 1l milk
  • 60g parmesan
  • 2 free range eggs, lightly whisked
  • 50g feta, crumbled
  • Steamed green beans, to serve
Instructions:
  • Boil pasta according to package instructions in a large saucepan, then drain 2 minutes before fully cooked. Allow to cool.
  • In a large frying pan over medium heat, heat oil. Cook onion until soft, about 5 mins. Add garlic and cook for 1 min. Brown mince while breaking up lumps with a wooden spoon for 5 mins. Add tomato, wine, 1/2 cup (125ml) water, bay leaves, herbs, spices, and sugar. Bring to a boil, then simmer on low for 15 mins until thickened. Season with salt and pepper.
  • Preheat the oven to 180C. In a saucepan over medium-low heat, melt the butter. Stir in the flour and cook for 1-2 mins until slightly grainy. Remove from heat and slowly whisk in the milk until the mixture is smooth. Return to medium heat and cook for 5-8 mins until thickened. Remove from heat and stir in 1/2 cup of parmesan cheese. Season with salt and pepper.
  • Mix the pasta with the egg, feta, and 1/3 of the béchamel sauce. Layer half of the pasta in a lightly greased 3L capacity ovenproof baking dish. Spread the mince mixture over the pasta, then top with the rest of the pasta. Pour the rest of the white sauce over it and sprinkle with the remaining parmesan. Bake for 40-45 minutes until golden and heated through. Serve alongside steamed green beans.
