Greek meatballs with pasta and tzatziki

Ingredients:
  • 500g premium beef mince
  • 100g creamy feta, crumbled
  • 1 x 72g pkt Greek spice blend
  • 2 tsp finely grated lemon rind
  • Salt & freshly ground pepper
  • 700g bottle Italian tomato pasta sauce
  • 500ml water
  • 250g pasta
  • 1 Lebanese cucumber, halved, seeds removed and coarsely grated
  • 1 clove garlic, crushed
  • 125.00 ml thick Greek yoghurt
  • 125.00 ml fresh mint leaves
Instructions:
  • Preheat your oven to 200°C. Mix together ground meat, feta cheese, 1 packet each of garlic, parsley, and rosemary from the Gourmet Garden pack, and lemon zest in a large bowl. Season generously with salt and pepper.
  • Shape the mixture into tablespoon-sized balls and arrange them on a large baking tray. Bake the meatballs for 30 minutes.
  • In a large saucepan, mix together the tomato pasta sauce and water, then bring to a boil. Stir in the rest of the garlic, parsley, and rosemary from the packet. Add the pasta and cook, stirring occasionally, for about 7 minutes until almost tender.
  • Set aside the covered pan off the heat for 10 minutes.
  • Mix together cucumber, garlic, and yoghurt in a small bowl. Season with salt and pepper. Serve the meatballs with penne, tzatziki, and fresh mint leaves.
