Greek meatballs with risoni salad

Budget-friendly flavorful meatballs that are easy, healthy, and sure to please even the pickiest eaters!
Ingredients:
  • 800g lean beef mince
  • 1 small red onion, grated
  • 40.00 ml oregano leaves, chopped
  • olive oil cooking spray
  • 1 lemon, rind finely grated, juiced
  • 437.50 ml risoni pasta
  • 1 tomato, quartered, deseeded, roughly chopped
  • 1 small red onion, finely chopped
  • 125.00 ml flat-leaf parsley leaves, chopped
Instructions:
  • In a bowl, blend together the mince, onion, garlic, and oregano. Season generously with salt and pepper. Thoroughly mix the ingredients. Shape the mixture into small balls using tablespoons.
  • Heat a large, non-stick frying pan with oil over medium-high heat. Cook meatballs in batches, shaking the pan occasionally, for 8 to 10 minutes until cooked through.
  • Prepare the lemon dressing by mixing lemon rind, 2 tablespoons of lemon juice, and garlic in a large bowl. Cook the risoni in a pot of boiling salted water until tender. Drain and stir it into the lemon dressing. Add tomato, onion, oregano, and parsley, then season with salt and pepper. Toss everything together until well combined.
  • Serve the delicious risoni salad in bowls and generously top with savory meatballs for a delightful meal.
