Delicious Greek lamb meatballs with citrusy orange zest, fresh mint, and garlic - perfect for any occasion!
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic
  • 1 chili pepper
  • 1 large shallot
  • 4 ounces salt pork
  • Zest of 1 orange
  • 2 tablespoons chopped mint
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup Greek yogurt
Instructions:
  • Sauté the veggies: In a small pan over medium heat, cook the oil, minced garlic, chili pepper, and shallot for 1 minute. Allow to cool.
  • Prepare the meatball mixture: In a large bowl, crumble the lamb. Spread the salt pork (or bacon), orange zest, and mint over the lamb, then season with pepper. Add the cooled garlic mixture and gently mix until combined.
  • Roll the meatball mixture into 1 1/4-inch balls and place them on a plate or sheet pan.
  • Heat a large cast iron pan over medium to medium-high heat. Brown the meatballs on all sides until cooked through, about 8 to 10 minutes. Cook in batches if needed to avoid crowding.
  • Serve warm with toothpicks or skewers alongside a side of creamy Greek yogurt for dipping.
