Simmer Italian-style tomatoes with cannellini beans and spinach, serve over penne, and top with feta for a creamy, sharp bite.
Ingredients:
  • 2 (14.5 ounce) cans Italian-style diced tomatoes
  • 1 (19 ounce) can cannellini beans, drained and rinsed
  • 10 ounces fresh spinach, washed and chopped
  • 8 ounces penne pasta
  • 0.5 cup crumbled feta cheese
Instructions:
  • Boil the pasta in a large pot of salted water until it is cooked to perfection.
  • In a large non-stick skillet, mix together tomatoes and beans. Bring to a boil over medium-high heat, then reduce heat and simmer for 10 minutes.
  • Stir in the spinach and cook for 2 minutes until wilted, stirring constantly.
  • Drizzle sauce over pasta and generously sprinkle with crumbled feta cheese.
