Greek-inspired orzo pasta cooked with seasoned lamb and tomatoes.
Ingredients:
  • 1 pound ground lamb
  • 2 (14.5 ounce) cans stewed tomatoes, undrained
  • 1 stalk celery, cut into 1/2 inch pieces
  • 1 cup uncooked orzo pasta
  • 0.25 teaspoon salt
  • 0.25 teaspoon cayenne pepper
  • 1 clove garlic, minced
Instructions:
  • In a heated large saucepan over medium-high heat, brown the lamb until no longer pink, breaking it into crumbles, for about 5 minutes. Add tomatoes with juice, celery, orzo, salt, cayenne pepper, and garlic. Bring to a boil, then simmer covered on medium-low heat until orzo is tender and has absorbed the tomato liquid, about 12 minutes.
