Delicious Greek lamb and veggie tray bake, perfect for the whole family to enjoy together.
Ingredients:
  • 6 baby potatoes, washed, quartered if large
  • Extra virgin olive oil spray
  • 8 lamb loin chops, trimmed
  • 1 red onion, halved, cut into wedges
  • 2 medium red capsicums, cut into large pieces
  • 275g amoroso truss tomatoes
  • 250g pkt Brand Greek lemon, garlic & herb marinade
  • 150g green beans, steamed
Instructions:
  • Preheat the oven to 180C (160C fan). Place the potatoes in a roasting pan and lightly coat them with oil. Roast for 15 minutes.
  • Heat a non-stick frying pan over medium-high heat. Sear the lamb for 1-2 minutes on each side until golden brown.
  • Combine lamb, onion, capsicum, and tomatoes with the potatoes. Pour the marinade over the mixture and toss to coat evenly. Roast in the oven for 45 minutes or until the potatoes are golden and the lamb is tender. Serve with beans on the side.
