Elevate your veggie game with this vibrant and flavorful Indian-style curry, packed with fresh vegetables and aromatic spices for a healthy and delicious meal.
Ingredients:
  • 9.20 gm olive oil
  • 500g lamb leg steaks, cubed
  • 1 brown onion, cut into thin wedges
  • 87.50 gm balti curry paste
  • 400g can diced tomatoes
  • 127.50 gm chicken style liquid stock
  • 500g cauliflower, trimmed, cut into florets
  • 150g green beans, trimmed, halved
  • 100g baby spinach
  • steamed doongara rice, to serve
  • Fresh coriander, to serve
  • Plain yoghurt, to serve
Instructions:
  • In a heavy-based saucepan set over medium-high heat, warm the oil. Add the lamb and onion. Sauté for 5 minutes until the lamb is golden brown. Stir in the curry paste and cook for an additional minute until fragrant.
  • Combine tomatoes and stock in a pan and bring to a boil. Reduce heat to medium-low, cover, and simmer for 30 minutes, stirring occasionally. Add cauliflower and simmer for another 15 minutes until lamb is tender. Mix in beans and cook for 5 more minutes until beans are tender. Stir in spinach. Serve with rice, coriander, and yogurt.
