Delicious pumpkin, raisin, and spiced filling between flaky puff pastry - a twist on classic pumpkin pie.
Ingredients:
  • 2 (15 ounce) cans pumpkin puree
  • 1 cup raisins
  • 1 cup fine semolina
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.125 teaspoon ground nutmeg
  • 2 sheets frozen puff pastry, thawed
  • 1 egg, slightly beaten
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Prepare the baking sheet by greasing it.
  • Warm the pumpkin puree in a skillet over medium heat, stirring occasionally, until it thickens as most of the liquid evaporates. Mix in sugar, raisins, semolina, cinnamon, cloves, and nutmeg. Take off the heat.
  • Place one puff pastry sheet onto the baking sheet. Spread the pumpkin mixture evenly, then top with the remaining pastry sheet. Brush the puff pastry with beaten egg for a golden finish.
  • Bake until beautifully golden brown in the preheated oven for 30 to 40 minutes.
