Beef and pumpkin moussaka

Greek comfort pie with creamy white sauce - a cozy and nourishing meal perfect for any night of the week.
Ingredients:
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 1.25 gm ground cinnamon
  • 1 tsp dried chilli flakes
  • 1 tsp dried oregano
  • 500g beef mince
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 500g butternut pumpkin, cut into 2cm pieces
  • 250g Swiss brown mushrooms, sliced
  • Red chilli, chopped, to serve
  • Oregano, chopped, to serve
  • Green salad, to serve
  • 75g unsalted butter
  • 75g plain flour
  • 600ml milk
  • 80g parmesan
  • 1.25 gm ground cumin
Instructions:
  • 1. Preheat your oven to 200°C. 2. Heat oil in a pan over medium heat. 3. Sauté onions for 3-4 minutes until softened. 4. Stir in garlic, spices, and dried oregano, cook for 1-2 minutes until fragrant. 5. Brown the beef for 6-8 minutes, stirring occasionally. 6. Add the remaining ingredients, bring to a simmer. 7. Cook until the pumpkin is tender, about 10-15 minutes.
  • In a pan over medium-high heat, melt butter. Add flour and cook, stirring, for 1 minute. Gradually whisk in milk and bring to a boil. Reduce heat to medium and cook, stirring, for 5 minutes until thickened. Stir in parmesan and cumin. Remove from heat.
  • Evenly distribute the beef into four 2-cup (500ml) baking dishes, gently pressing it down. Cover with the white sauce, then bake for 25 minutes or until beautifully golden. Let it rest for 10 minutes, then sprinkle with oregano and chili. Enjoy alongside a fresh salad.
