Mediterranean quinoa salad with olives, feta, tomatoes, and basil - perfect for any gathering.
Ingredients:
  • 2 cups water
  • 1 cup quinoa, rinsed
  • 0.5 cup olive oil
  • 0.33333334326744 cup sliced Kalamata olives
  • 0.33333334326744 cup crumbled feta cheese
  • 0.33333334326744 cup halved cherry tomatoes
  • 2 tablespoons shredded fresh basil leaves
Instructions:
  • In a saucepan, bring quinoa and water to a boil. Cover, reduce heat to low, and simmer for 15 to 20 minutes until the quinoa is tender and water is absorbed. Transfer to a serving bowl and let cool.
  • Drizzle cooled quinoa with olive oil and mix. Gently combine olives, feta cheese, tomatoes, and basil into the quinoa.
