Greek quinoa salad with feta, nuts, and cranberries - a quick and delicious side dish.
Ingredients:
  • 2 cups low-sodium chicken broth
  • 1 cup quinoa
  • 0.5 cup chopped walnuts
  • 0.5 cup dried cranberries
  • 0.33333334326744 cup crumbled feta cheese
Instructions:
  • In a saucepan, bring the chicken broth and quinoa to a boil. Cover, reduce heat to low, and simmer for 15 to 20 minutes until the quinoa is tender and has absorbed the broth. Transfer the quinoa to a bowl.
  • Fold in walnuts and cranberries with the quinoa, then mix in feta cheese with a gentle touch.
