Greek rice-stuffed chicken rolls

Quick, budget-friendly chicken dinner ready in 30 minutes!
Ingredients:
  • 250g pkt frozen chopped spinach, thawed, excess moisture removed
  • 100g smooth Danish feta, crumbled
  • 82.50 ml fresh dill, chopped, firmly packed
  • 100g (1/2 cup) Uncle Ben's® Microwave Brown Rice, cooked
  • 2 green shallots, finely chopped
  • 40.00 ml currants
  • 1 tsp lemon rind, finely grated
  • 8 chicken breast schnitzel steaks
  • 27.30 gm extra virgin olive oil
  • 400g can baby roma tomatoes or cherry tomatoes
  • 500g tomato passata
  • Balsamic glaze, to serve
  • Extra fresh dill sprigs, to serve
Instructions:
  • Combine spinach, feta, dill, rice, shallot, currants, and lemon rind in a large bowl. Mix thoroughly and season to taste.
  • Take a portion of the spinach mixture and lay it in the middle of a chicken steak. Roll it up to seal, then use a toothpick to hold it in place. Repeat this process with the rest of the chicken and spinach mixture.
  • First, heat oil in a spacious non-stick pan over medium-high heat. Cook the chicken, turning carefully, for 6 minutes until golden. Then, add tomato and passata, reduce heat to low, cover, and cook for 10-12 minutes until chicken is cooked through. Season, drizzle with balsamic, and end with a sprinkle of extra dill.
