Light and vibrant Greek salad with olives, feta, cucumber, tomato, and red onion. Serve fresh for maximum crunch. Pair with Greek rice salad, haloumi gyros, stuffed capsicum, and braised lamb for a complete Greek feast.
Ingredients:
  • 6 firm ripe tomatoes, coarsely chopped
  • 3 Lebanese cucumbers, coarsely chopped
  • 1 red onion, sliced into rings
  • 1 red capsicum, halved, deseeded, coarsely chopped
  • 200g marinated Greek olives
  • 220g marinated feta, coarsely chopped
  • 1 tsp dried Greek oregano
  • 2.40 gm salt
  • 125ml (1/2 cup) olive oil
  • 60ml (1/4 cup) white vinegar
Instructions:
  • In a salad bowl, toss together tomato, cucumber, onion, capsicum, olives, and feta. Sprinkle with oregano and salt to taste.
  • In a jug, combine the oil and vinegar, whisking together. Drizzle the salad with the dressing, toss to combine, and serve promptly.
