Garlic bread with Greek salad and tzatziki.
Ingredients:
  • 1 (4 ounce) package Idahoan® Roasted Garlic Flavored Mashed Potatoes
  • 1 pound butter, softened
  • 1 loaf French bread
  • 0.5 pint cherry tomatoes, cut in half
  • 1 cup cucumber, peeled and sliced into 1/4-inch thickness and cut into quarters
  • 1 medium red onion, chopped into thin slices and soaked 10 minutes in small bowl of ice water to reduce sharpness
  • 1 small green pepper, coarse chopped
  • 0.75 cup kalamata olives, pitted and sliced
  • 6 tablespoons olive oil
  • 1.5 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 garlic cloves, minced
  • 0.75 cup crumbled feta cheese, for topping
  • 2 cups plain Greek yogurt
  • 1 cup cucumber, small dice
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons finely chopped fresh dill
  • 1 pinch Salt and pepper, to taste
Instructions:
  • Blend the dry Idahoan Roasted Garlic Potatoes package with the butter until combined. Slice the French bread in half lengthwise and generously spread it with the roasted garlic mixture. Broil until the butter spread is melted and the top is toasted. (See footnote for grilling option.)
  • Remove the onion from the ice water and gently dry it with paper towels. In a large bowl, toss together all salad ingredients, excluding the cheese. Pile the Greek salad onto the French bread and generously sprinkle cheese on top. Enjoy alongside some Tzatziki sauce.
  • For the Tzatziki Sauce, blend Greek yogurt, cucumber, lemon juice, garlic, and dill in a bowl. Mix thoroughly, taste, and add salt and pepper to season.
