Prep ahead with a colorful salad in a jar for a quick and nutritious on-the-go lunch solution.
Ingredients:
  • 3 tsp white balsamic vinegar
  • 4.60 gm extra virgin olive oil
  • 1/2 tsp dried oregano leaves
  • 130g (3/4 cup) no-added-salt chickpeas, rinsed, drained
  • 1/2 red capsicum, deseeded, chopped
  • 1/2 Lebanese cucumber, chopped
  • 75g cherry tomatoes, halved
  • 20.00 ml pitted black olives, chopped
  • 30g feta, crumbled
  • 30g baby spinach
Instructions:
  • In a 500ml (2 cup) glass jar with a secure lid, mix together balsamic vinegar, oil, and oregano.
  • Layer chickpeas in a jar with capsicum, cucumber, tomato, olives, feta, and spinach. Seal with the lid.
  • Transfer to a serving plate and generously toss with the delicious dressing before serving.
