Savory Mediterranean pinwheels deliver bold flavors in a convenient bite-sized snack that can be prepped ahead of time.
Ingredients:
  • 1 container (8 oz) garlic-and-herb whipped cream cheese
  • 1 container (4 oz) crumbled feta cheese
  • 1/3 cup finely chopped cucumber
  • 6 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1/3 cup pitted kalamata olives, coarsely chopped
  • 3 small plum (Roma) tomatoes, chopped (about 1 1/2 cups)
  • 3 cups fresh baby spinach leaves
Instructions:
  • Combine cream cheese and feta cheese in a small bowl and mix with an electric mixer until smooth. Mix in the cucumber.
  • Place tortillas on a microwave-safe plate or paper towel and microwave on High for 10 to 15 seconds to soften them. Spread approximately 1/4 cup of the cheese mixture evenly over each tortilla. Sprinkle olives and tomatoes on top, then add 1/2 cup of spinach to each tortilla, making sure to leave a 1/2-inch edge. Roll up the tortillas tightly and wrap each in plastic wrap. Refrigerate for 2 to 3 hours to allow the flavors to blend.
  • If desired, trim ends of rolled tortillas. Slice each roll into eight 1-inch pieces. Arrange on a serving dish with cut sides facing down.
