Portable Greek salad perfect for picnics.
Ingredients:
  • 9.20 gm olive oil
  • 21.00 gm lemon juice
  • 1 Lebanese cucumber, halved, chopped
  • 1 large green capsicum, chopped
  • 1 small red onion, chopped
  • 3 medium tomatoes, cut into wedges
  • 82.50 ml pitted kalamata olives
  • 70g low-fat feta, chopped
Instructions:
  • In a large bowl, mix together the oil and lemon juice. Add in the cucumber, capsicum, onion, tomato, olives, and feta. Toss everything together until well combined. Serve and enjoy.
