Portable Greek salad perfect for picnics.
Ingredients:
9.20 gm olive oil
21.00 gm lemon juice
1Lebanese cucumber, halved, chopped
1 large green capsicum, chopped
1 small red onion, chopped
3 medium tomatoes, cut into wedges
82.50 ml pitted kalamata olives
70g low-fat feta, chopped
Instructions:
In a large bowl, mix together the oil and lemon juice. Add in the cucumber, capsicum, onion, tomato, olives, and feta. Toss everything together until well combined. Serve and enjoy.
