Vibrant Greek salad complements any meat or fish dish in the summer.
Ingredients:
4 large ripe egg tomatoes, quartered lengthways
1 small red onion, halved, thinly sliced
2 small Lebanese cucumbers, halved, sliced
16 (about 80g) Kalamata olives
1/2 tsp dried oregano leaves
60mls (1/4 cup) olive oil
31.50 gm fresh lemon juice
Salt & ground black pepper, to taste
125g feta, cut into small cubes
Instructions:
In a large bowl, mix together the tomatoes, onion, cucumbers, olives, and oregano. In a small jug, whisk together the olive oil and lemon juice, then season with salt and pepper.
Drizzle the dressing over the tomato mixture and mix thoroughly. Cover and let sit for 10 minutes. Gently fold in the feta and serve promptly.
