Vibrant Greek salad complements any meat or fish dish in the summer.
Ingredients:
  • 4 large ripe egg tomatoes, quartered lengthways
  • 1 small red onion, halved, thinly sliced
  • 2 small Lebanese cucumbers, halved, sliced
  • 16 (about 80g) Kalamata olives
  • 1/2 tsp dried oregano leaves
  • 60mls (1/4 cup) olive oil
  • 31.50 gm fresh lemon juice
  • Salt & ground black pepper, to taste
  • 125g feta, cut into small cubes
Instructions:
  • In a large bowl, mix together the tomatoes, onion, cucumbers, olives, and oregano. In a small jug, whisk together the olive oil and lemon juice, then season with salt and pepper.
  • Drizzle the dressing over the tomato mixture and mix thoroughly. Cover and let sit for 10 minutes. Gently fold in the feta and serve promptly.
