Whip up a tasty family meal tonight with just a quick stop at the supermarket.
Ingredients:
  • 500g sweet potato, peeled, chopped
  • 2.50 gm ground cumin
  • 2.50 gm hot paprika
  • 600g lamb eye of loin fillet
  • 270g pkt complete Greek salad
Instructions:
  • Preheat your oven to 190°C. Combine sweet potato and half of the oil in a baking tray. Roast in the oven for 25 minutes. Allow to cool.
  • Mix the spices and the rest of the oil together. Massage the mixture onto the lamb. In a hot frying pan, sear the lamb for 3 minutes on each side. Let it rest for 5 minutes, then slice it into pieces. Enjoy the delicious lamb served at room temperature.
  • Mix salad greens, olives, crumbled feta cheese, and roasted sweet potato in a large bowl. Drizzle with dressing and toss until evenly coated. Serve alongside succulent lamb.
