Greek-inspired red potato salad with zesty lemon, tangy feta, and flavorful sun-dried tomatoes - perfect for any gathering.
Ingredients:
  • 6 medium red potatoes, cut into 1-inch cubes
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 0.5 cup crumbled feta cheese
  • 0.25 cup minced white onion
  • 0.25 cup diced sun-dried tomatoes
  • 1 tablespoon lemon juice
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon sea salt
Instructions:
  • Bring salted water to a gentle boil and add potatoes. Cook for about 12 minutes until easily mashed with a fork. Drain and transfer potatoes to a bowl of cold water to halt cooking.
  • Mix together creamy mayonnaise, tangy sour cream, flavorful feta cheese, aromatic onion, juicy tomatoes, pungent garlic, zesty lemon juice, smooth oil, bold pepper, and savory salt until well combined. Gently stir in the tender potatoes.
  • Chill in the refrigerator for 1 hour before serving.
