Easy Greek potato salad with zesty lemon olive oil dressing, enjoy immediately or chilled.
Ingredients:
  • 12 red potatoes
  • 0.25 cup chopped green onion
  • 0.25 cup olive oil
  • 0.25 cup red wine vinegar
  • 1.5 teaspoons fresh lemon juice
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon coarse salt, or to taste
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon white sugar
  • 0.25 teaspoon dried rosemary, crumbled
  • 1 pinch ground red pepper
Instructions:
  • In a large pot, submerge red potatoes in salted water and bring to a boil. Simmer on medium-low heat until tender, approximately 25 minutes. Drain and cool quickly in the freezer for about 30 minutes.
  • Cut potatoes into bite-sized pieces and add to a spacious salad bowl; mix potatoes with chopped green onion.
  • In a bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic powder, onion powder, salt, black pepper, oregano, sugar, rosemary, and red pepper. Pour the dressing over the potatoes and toss to coat. Serve right away or chill until ready to serve.
