Delicious Greek lemon chicken soup made with fresh lemon juice, tender chicken, and rice - perfect as a light and easy appetizer.
Ingredients:
  • 8 cups chicken broth
  • 0.5 cup fresh lemon juice
  • 0.5 cup shredded carrots
  • 0.5 cup finely chopped onion
  • 0.5 cup finely chopped celery
  • 6 tablespoons chicken soup base
  • 0.25 teaspoon ground white pepper
  • 0.25 cup margarine
  • 8 egg yolks
  • 1 cup cooked white rice
  • 1 cup diced, cooked chicken meat
  • 16 slices lemon
Instructions:
  • In a large pot, mix together chicken broth, lemon juice, carrots, onions, celery, soup base, and white pepper. Bring to a boil over high heat, then lower the heat and simmer for 15 to 20 minutes until the vegetables are tender.
  • Combine the margarine and flour in a small bowl, then mix it into the soup slowly. Simmer and stir often for 8 to 10 minutes.
  • In a bowl, whisk egg yolks until they are pale in color. Slowly mix in some hot soup, pouring it in a steady stream while vigorously whisking the egg yolks. Then, pour the egg mixture back into the pot and heat until warmed through.
  • Combine the rice and chicken in the pot and heat until warmed. Serve the soup in bowls and decorate with lemon slices.
