Elevate your cooking with zesty Greek lemon chicken soup.
Ingredients:
  • 3 medium lemons
  • 2 litres chicken style liquid stock
  • 200.00 gm white rice
  • 300g chicken breast fillets, trimmed, chopped
  • 2 eggs
  • Finely shredded fresh mint leaves, to serve
Instructions:
  • Grate one lemon zest using a citrus zester. Juice all the lemons.
  • In a saucepan over high heat, bring stock and lemon rind to a boil. Lower the heat to medium-high, then stir in rice and simmer for 15 minutes until just tender. Add chicken and cook for 3 to 4 minutes until chicken is cooked through, stirring occasionally.
  • Take the pot off the heat and mix in the refreshing lemon juice. In a heatproof jug, gently whisk the eggs. Gradually pour in 1/2 cup of the hot stock while whisking. Slowly drizzle the egg mixture into the stock while stirring continuously until well combined.
  • Serve the dish in bowls, garnished with lemon zest and fresh mint.
