Deliciously light and healthy recipes for indulgent flavor without the guilt.
Ingredients:
  • 4 (about 125g each) chicken breast fillets
  • 2 Desiree potatoes, thinly sliced (see note)
  • 2 large vine-ripened tomatoes, coarsely chopped
  • 2 tsp salted baby capers, rinsed, drained
  • 40.00 ml sliced pitted kalamata olives
  • 35g (1/4 cup) crumbled low-fat feta
  • 80ml (1/3 cup) white wine
  • Fresh basil leaves, to serve
  • Steamed green round beans, to serve
Instructions:
  • Preheat your oven to 190°C. Make four deep slits on the top of each chicken piece. Lay out four 25cm square non-stick baking paper pieces on your work surface.
  • Place a portion of potato slightly overlapping in the center of each piece of paper. Top with a piece of chicken, then distribute tomato, capers, olives, and feta evenly. Drizzle with wine, season with pepper, and fold to create a parcel, enclosing the filling.
  • Place the parcels on a large baking tray and bake for 20 minutes, or until the chicken is fully cooked and the potato is tender. Top with basil, open the parcels, and serve with beans.
