Elevate chicken or fish with a savory sweet pepper and olive tomato sauce topping.
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 1 medium sweet onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1/2 medium red bell pepper, coarsely chopped (1/2 cup)
  • 1/2 medium yellow bell pepper, coarsely chopped (1/2 cup)
  • 1 can (28 oz) Muir Glen™ organic whole peeled tomatoes, undrained
  • 2 tablespoons Muir Glen™ organic tomato paste
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup sliced pitted kalamata olives
Instructions:
  • Heat oil in a 10-inch skillet over medium heat. Sauté onion, garlic, and bell peppers for 4 to 5 minutes until crisp-tender, stirring frequently. Add tomatoes, tomato paste, and pepper flakes, breaking up tomatoes with a spoon, and bring to a boil.
  • Lower the heat and let the mixture simmer uncovered for 20 to 25 minutes, occasionally stirring until it thickens. Add the olives and stir.
  • Enjoy this flavorful dish on top of your favorite baked chicken, fish, or cooked pasta.
