Greek-inspired lamb sausages with lentils, topped with feta, olives, and lemon for a delicious and easy gourmet dish.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 2 celery stalks, finely chopped
  • 1 small eggplant, finely chopped
  • 2 garlic cloves, crushed
  • 400g can diced tomatoes
  • 44.40 gm tomato paste
  • 1 dried bay leaf
  • 2 sprigs fresh thyme
  • 375g packet French-style lentils, rinsed, drained
  • 4 pita bread
  • 500g lamb sausages
  • 2 tsp finely grated lemon rind
  • 42.00 gm lemon juice
  • 125.00 ml pitted kalamata olives
  • 62.50 ml fresh dill sprigs, plus extra to serve
  • 82.50 ml chopped fresh flat-leaf parsley, plus extra to serve
  • 100g Greek-style fetta, crumbled
  • Lemon wedges, to serve
Instructions:
  • In a large, deep frying pan over medium heat, heat oil. Add onion, celery, and eggplant. Cook for 10 minutes, stirring occasionally, until vegetables begin to soften.
  • Saute the garlic for 1 minute until fragrant. Stir in the tomatoes, tomato paste, 1/3 cup water, bay leaf, and thyme. Cover the pot and bring it to a boil. Lower the heat and let the mixture simmer for 10 minutes. Mix in the lentils and simmer for an additional 15 to 20 minutes until the lentils are almost cooked through.
  • Preheat a chargrill pan over high heat. Cook each pita individually for 1 minute per side until nicely charred.
  • Heat oil in a large deep frying pan over medium-high heat and add squeezed sausages from casings. Cook for 5 minutes, breaking up the sausage with a wooden spoon until browned all over.
  • Combine braised lentils in a pan, bring to a boil, then simmer on low for 5 minutes. Add lemon rind and juice, olives, dill, and parsley. Cook for an additional 2 minutes until heated through. Season generously with salt and pepper.
  • Top with crumbled feta cheese, fresh dill, and parsley. Accompany with warm pita bread and lemon wedges for a delightful presentation.
