Green Lentils and Rice Assyrian Style

Middle Eastern classic: Rice, caramelized onions, lentils.
Ingredients:
  • 1 cup dry green lentils
  • 4 tablespoons olive oil, divided
  • 1 cup basmati rice
  • 1 large onion, chopped
  • 0.75 teaspoon salt, or to taste
Instructions:
  • In a pot, combine lentils with water and bring to a vigorous boil for 5 minutes. Remove from heat, cover, and set aside. Meanwhile, rinse rice in cold water until water runs clear.
  • In a skillet over medium heat, heat 2 tablespoons olive oil or vegetable oil. Add the rice and sauté for 1 minute until the grains are opaque and white. Next, add the lentils and water. Bring the mixture to a boil, then cover, reduce heat to medium-low, and simmer for 5 minutes. Stir once, cover again, reduce heat to low, and cook covered until the rice is tender, about 15 minutes. Remember, keep the lid on while cooking!
  • Heat the remaining oil in a skillet over medium heat. Cook the onion until softened and translucent, about 5 minutes. Reduce to medium-low heat and continue cooking until dark brown and very tender, about 15-20 minutes. Stir caramelized onion into the rice and season with salt.
