Indulge in a Greek-inspired cheesy spinach dish.
Ingredients:
  • 2 egg whites
  • 250g baby spinach leaves
  • 2 bunches rocket, trimmed
  • 3 shallots, trimmed, thinly sliced
  • 20.00 ml chopped fresh dill
  • Light olive oil spray
  • 125g low-fat feta, crumbled
Instructions:
  • In a large saucepan over medium-low heat, cook the spinach and rocket with a light sprinkle of water until wilted, about 10 minutes. Drain, squeeze out excess moisture, and coarsely chop.
  • Whisk eggs and egg whites gently in a bowl, then fold in the spinach mixture, shallot, and dill. Season with pepper to taste.
  • Preheat a 20cm non-stick frying pan over medium heat, then spray with oil. Add the egg mixture and cook for 5-6 minutes until the edges are set but the center is still slightly runny. Sprinkle with feta before serving.
  • Preheat the grill to medium-high. Grill the omelette for 5 minutes until golden and just set. Allow it to cool slightly for 5 minutes before serving.
  • Transfer to a plate and slice into wedges.
