Green Apple Curry

Tangy green apple curry with Granny Smith apples, best enjoyed on Indian roti.
Ingredients:
  • 1 teaspoon butter
  • 3 tablespoons vegetable oil
  • 2 large cloves garlic, smashed and roughly chopped
  • 1/4 cup onion, finely chopped
  • 2 tablespoons yellow curry powder
  • 2 tablespoons water
  • 4 tart green Granny Smith apples, cored and roughly chopped (peel ON)
  • 1 teaspoon kosher salt
  • 1 1/2 cups water
  • 1 tablespoon brown sugar, packed
Instructions:
  • Infuse the oil with garlic: Heat the oil in a large sauté pan over medium heat. Sauté the garlic until golden brown, then remove using a slotted spoon. Enjoy as a snack or discard the garlic.
  • Caramelize the onions: Sauté the chopped onions until they turn translucent, approximately 4 minutes.
  • Prepare the curry paste by combining curry powder with 2 tablespoons of water until smooth. Add the paste to the onions once translucent, cook for 1 minute, then mix in the butter.
  • Combine the apples, salt, and brown sugar in the pan. Pour in 1 1/2 cups of water, or just enough to nearly cover the apples.
  • Bring mixture to a boil, then simmer uncovered on low for 30 minutes until thickened and cooked through. Add water if needed to prevent sticking. Serve with roti, flour tortilla, pita bread, or rice.
