Tangy green bean salad with herbs, tomatoes, and olives, drizzled in red wine vinegar.
Ingredients:
  • 1 clove minced garlic
  • 4 cups steamed green beans
  • 2 cups chopped tomatoes
  • 1/4 cup kalamata olives
  • 3 tablespoons chopped fresh herbs (such asparsley, tarragon, and/or basil), plus more for garnish
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon red wine vinegar
Instructions:
  • Warm oil in a large pot over gentle heat. Sauté garlic until aromatic, about 45 to 60 seconds. Add green beans, tomatoes, olives, herbs, salt, and pepper; mix well. Drizzle with vinegar, toss to coat. Sprinkle with fresh herbs for garnish.
