Slow-cooked green beans with tomatoes, bacon, and onions - a flavorful Thanksgiving side from Pioneer Woman.
Ingredients:
  • 4 slices thick cut bacon (about 4 ounces), cut into 1-inch segments
  • 1/2 large onion, diced (about 3/4 cup)
  • 1 clove garlic, minced
  • 1 pound fresh, firm green beans (they should break when you bend them, not bend like a rubber band), stem ends trimmed
  • 1 14.5-ounce can whole tomatoes
  • 1 large sprig fresh thyme
  • kosher salt
  • Freshly ground black pepper
  • 1/8 to 1/4 teaspoon cayenne
Instructions:
  • Render the bacon: Spread bacon pieces in a large, thick-bottomed pot and cook over medium heat until the fat starts to render.
  • In a sizzling pan, toss in the savory bacon and chopped onion. Sauté until the onion turns translucent. Introduce the garlic (if desired) and cook for another minute. Remove any extra fat from the pan before moving on.
  • Combine the green beans, whole canned tomatoes with their juices, and optional sprig of thyme in the pot. Season with salt, pepper, and cayenne for a burst of flavor.
  • Simmer gently: Place a lid on the pot and reduce the heat to low. Let it gently simmer for 45 minutes to 1 hour until the beans are tender, giving it an occasional stir. Slow Cooker Method: If using a slow cooker, transfer the cooked bacon and onions from the initial steps, along with the beans, tomatoes, and spices. Cook on high for 2 to 3 hours until the beans are perfectly tender and the tomatoes have broken down. Serve and enjoy!
