Savory pinto beans cooked with crispy bacon, tomatoes, green chiles, and Mexican spices for a zesty and satisfying dish.
Ingredients:
  • 1 pound dried pinto beans, rinsed
  • 4 cups water, or as needed
  • 2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
  • 0.5 pound bacon, cut into 1/2-inch pieces
  • 1 tablespoon chili powder, or to taste
  • 1 tablespoon ground cumin, or to taste
  • 1.5 teaspoons garlic powder, or to taste
  • 0.5 bunch fresh cilantro, chopped
  • salt to taste
Instructions:
  • In a large pot, add pinto beans and cover them with water, leaving a 2 to 3 inch margin. Allow the beans to soak overnight for optimal results.
  • After draining the beans, return them to the pot and cover with fresh water. Add tomatoes, bacon, onion, chili powder, cumin, and garlic powder. Bring to a boil, then simmer on low heat for 3 hours. Remember to check and add water as needed.
  • Combine fresh, fragrant cilantro and a pinch of salt with the beans and let them simmer until perfectly tender, approximately 1 hour.
