Ultimate refried beans: Simmered pinto beans with savory seasonings and fire-roasted tomatoes for unbeatable flavor!
Ingredients:
  • 1.75 cups dry pinto beans
  • 1 cup diced yellow onion
  • 2 large cloves garlic, chopped
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon celery seed
  • 0.75 teaspoon salt
  • 0.66666668653488 cup fire-roasted diced tomatoes
  • 0.5 teaspoon hot pepper sauce (such as Tapatio®)
  • 0.25 teaspoon dried Mexican oregano
  • 0.25 teaspoon cayenne pepper
Instructions:
  • Place pinto beans in a bowl and generously cover with water, ensuring there is a 2-inch layer over the beans. Let soak for 8 hours or overnight.
  • 1. Drain beans, then add to a medium saucepan. Cover with water, ensuring they are submerged by about 1 inch. Stir in onion, garlic, chili powder, cumin, celery seed, salt, and black pepper. Bring to a boil, then simmer on low heat with a lid for 1 1/2 hours.
  • After draining the liquid using a colander, place the solids in a food processor. Add diced tomatoes, hot sauce, oregano, and cayenne, then blend until you reach your preferred thickness.
