Spicy Mexican beans cooked with jalapeno, chili powder, and cumin for maximum flavor.
Ingredients:
  • 1 pound dried pinto beans, rinsed
  • water to cover
  • 1 (32 ounce) container whole peeled tomatoes with juice
  • 1 red onion, chopped
  • 1 jalapeno pepper, chopped
  • 1 tablespoon chili powder, or to taste
  • 1 tablespoon ground cumin, or to taste
  • 1.5 teaspoons garlic powder, or to taste
  • 0.5 bunch fresh cilantro, chopped
  • salt and ground black pepper to taste
Instructions:
  • In a large pot, combine pinto beans with enough water to cover by 2 inches. Add tomatoes with their juices, onion, jalapeno pepper, chili powder, cumin, and garlic powder. Bring to a boil, then simmer on low for 3 hours.
  • Gently fold in fresh cilantro, a pinch of salt, and a dash of pepper. Let it simmer for another hour until the beans are tender. Adjust the seasoning to your liking for enhanced flavor.
