Green chicken curry with coconut sambal recipe

15-minute homemade green chicken curry topped with coconut sambal for a fast and flavorful weeknight dinner.
Ingredients:
  • 18.40 gm vegetable oil
  • 450g pkt Made Easy Thai Green Chicken Stir Fry with Capsicum and Green Beans
  • 250g pkt Coconut Chilli Lime Rice
  • 125.00 ml finely chopped coriander
  • 1/4 red onion, finely chopped
  • 20g shredded coconut
  • 42.00 gm lime juice
Instructions:
  • In a wok or large deep frying pan over medium heat, heat the oil. Add the chicken mixture and cook for 8 minutes, stirring occasionally. Pour in 1/4 cup (60ml) of water and cook for an additional 2 minutes until the chicken is fully cooked.
  • Microwave the rice according to packet instructions.
  • In a small bowl, mix together coriander, onion, coconut, and lime juice. Season to taste for a flavorful coconut sambal.
  • Portion out the rice and curry into individual serving bowls, then generously sprinkle with the flavorful coconut sambal.
