Green chicken curry

Irresistible green chicken curry will have your family begging for more!
Ingredients:
18.40 gm oil
1onion, sliced
87.50 gm green curry paste
255.00 gm chicken stock
400ml can coconut milk
500.00 ml barbecued chicken, shredded
100g green beans, trimmed and halved
1zucchini, sliced
62.50 ml coriander leaves
Rice, to serve
Instructions:
In a large saucepan over high heat, sizzle the oil and sauté the onion until tender, about 2-3 minutes.
Sauté the curry paste until fragrant for 1 minute. Add stock and coconut milk, then bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
Add the chicken, green beans, and zucchini to the pot. Let it simmer without a lid for 2-3 minutes until the beans are tender and the chicken is heated through. Season with your favorite seasonings to your liking.
Take the saucepan off the heat. Gently mix in fresh coriander leaves and dish up with a side of rice.
