Irresistible green chicken curry will have your family begging for more!
Ingredients:
  • 18.40 gm oil
  • 1 onion, sliced
  • 87.50 gm green curry paste
  • 255.00 gm chicken stock
  • 400ml can coconut milk
  • 500.00 ml barbecued chicken, shredded
  • 100g green beans, trimmed and halved
  • 1 zucchini, sliced
  • 62.50 ml coriander leaves
  • Rice, to serve
Instructions:
  • In a large saucepan over high heat, sizzle the oil and sauté the onion until tender, about 2-3 minutes.
  • Sauté the curry paste until fragrant for 1 minute. Add stock and coconut milk, then bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
  • Add the chicken, green beans, and zucchini to the pot. Let it simmer without a lid for 2-3 minutes until the beans are tender and the chicken is heated through. Season with your favorite seasonings to your liking.
  • Take the saucepan off the heat. Gently mix in fresh coriander leaves and dish up with a side of rice.
