Green chicken curry recipe

Make homemade green chicken curry in 15 minutes for a better-than-takeout meal!
Ingredients:
  • 6 Australian Chicken Thigh Fillets, chopped
  • 100g curry paste
  • 1 red onion, cut into wedges
  • 1 red capsicum, seeded, thinly sliced
  • 400ml coconut milk
  • 1 bunch choy sum, cut into 5cm lengths
  • 200g cherry tomatoes
  • 21.00 gm lime juice
  • 16.00 gm brown sugar
  • 24.40 gm fish sauce
  • 450g pkt microwavable white rice
Instructions:
  • Over high heat, heat a wok or large deep frying pan. Cook the chicken by stir-frying for 5 minutes or until cooked through. Add the curry paste and stir-fry for 1 minute until aromatic.
  • Sauté the onion and capsicum in the wok or pan for 1 minute until heated through. Pour in the coconut milk and bring to a boil. Simmer for 5 minutes until the sauce slightly thickens.
  • Combine choy sum, tomatoes, lime juice, sugar, and fish sauce with the chicken mixture in the wok or pan. Stir well and take it off the heat.
  • Microwave the rice according to package instructions, then transfer it to a medium bowl.
  • Plate the flavorful curry alongside the fragrant rice for a perfect pairing.
